On the plateau of the Alta Murgia, agro-pastoral activity has for millennia been one of the most authentic expressions of the identity of the area.<\/p>\n
In this evocative landscape, characterised by pastures, expanses of limestone and numerous spontaneous aromatic herbs, people have learned to live following the rhythms of nature and the seasons.<\/p>\n
The natural essences on which the animals feed give the milk unmistakable scents, qualities and flavours. To this precious natural heritage is added the knowledge of the cheesemakers, handed down from generation to generation, which makes it possible to obtain genuine cheeses made according to artisan methods.<\/p>\n
The experience takes place at Masseria Scalera, a family-run farm where shepherding and the art of cheese-making continue to be practised with passion and respect for tradition.<\/p>\n
Welcoming the participants is Maria Antonietta Scalera. After some work experiences abroad, Maria Antonietta chose to return to her family\u2019s farmhouse and to follow the path taken by her father and her ancestors.<\/p>\n
Today she devotes herself with love to shepherding and to the production of cheeses, living in deep harmony with nature, with the animals and with the succession of the seasons.<\/p>\n
During the visit, Maria Antonietta tells the story of her particular choice of life and accompanies guests in discovering the daily activities of the farmhouse. It is an authentic encounter with a woman who has decided to preserve and renew an ancient tradition, transforming it into her own life project.<\/p>\n
The route continues in the productive heart of the farmhouse: the cheese-making workshop. Here you can observe at close hand the artisan methods used to transform milk into cheeses, mozzarella and other genuine products.<\/p>\n
Maria Antonietta illustrates the main stages of processing and reveals the little secrets that make it possible to obtain natural products with an authentic flavour, an expression of the territory of the Alta Murgia.<\/p>\n
At the end of the visit, a tasting of the cheeses made by the farm awaits us, accompanied by Pane di Altamura DOP, local wine, water and coffee.<\/p>\n
Before saying goodbye to Maria Antonietta and the animals of the farmhouse, we can allow ourselves a few more moments of tranquillity, immersed in the silence and the rural atmosphere of the Murgia.<\/p>\n
